Blending classical French technique with contemporary Southern California flavors, Chef Zamora developed an early appreciation for culinary creativity evolving into his own distinctive style. Hailing from the San Fernando Valley, Chef approaches every menu with precision using fresh, locally sourced ingredients to present approachable yet unique and bold dishes. Chef Zamora is a father of two and an avid fan of the Los Angeles Dodgers and Clippers.
With over twenty-five years in hospitality, James McPaul brings a passion for seamless service to Silver Trumpet Restaurant and Bar. Past accolades in team service include Wine Spectator's Grand Award, AAA Five Diamond, Forbes Five Star, Michelin Guide Three Stars, and Sante Award for Service. James was a part of opening teams for Disney's Animal Kingdom Lodge, Hilton Orlando, and Morton's The Steakhouse World Trade Center. Most recently, he helped oversee the transition of The Resort at Pelican Hill to a St. Regis branded property for Marriott's luxury portfolio. A graduate of Columbia University, James enjoys Philadelphia sports and Broadway shows at Segerstrom Center for the Arts.
Josh Quale brings an exceptional depth of experience to his role as Restaurant & Bar Manager at Silver Trumpet. His career spans more than 20 years across luxury hospitality properties, Disney entertainment, and corporate learning & development. Beginning in local restaurants in his hometown of Hemet, California, he served in a variety of front-line, training, and leadership roles across Disneyland Resort, including Disney University and the opening team of Lamplight Lounge at Disney's California Adventure Park. A former performing musician and thespian, Josh has long understood that hospitality, at its heart, is the performance of service. Every detail is an opportunity to connect with guests, anticipate their needs, and create experiences that guests will cherish.
Sous Chef Augustin Bruno blends his vision of French technique with bold flavors, culminating in an exciting demonstration of cuisine for every palate. Born in Mexico and raised in Anaheim, California, Chef Bruno has perfected the art of presentation using creativity to showcase every detail, incorporating the flavors of Mexico and Southern California into his cooking. Chef Bruno is a father and enjoys watching soccer with his family during his time away from Silver Trumpet.
Desserts at Silver Trumpet are as artistic as they are delicious all thanks to Pastry Chef Meilynn Romero. With over 12 years in hospitality, Chef Meilynn is a master at delighting the senses using unique flavors and traditional cooking methods to accommodate any sweet tooth. Avenue of the Arts Hotel, Costa Mesa is also a prime destination for large group events and weddings, where she truly shines, producing desserts to scale without losing confection perfection. Born in El Salvado, raised in Orange County, and a graduate of Orange Coast College, Chef Meilynn incorporates cultural influences to her cooking with ease. A mother of three, Chef enjoys spending time with her family when away from Silver Trumpet.
